zucchini and chocolate?

OK, so I already ate alot of this recipe, and it is very delicious!

When your garden is exploding with squash and friends and neighbors say no thanks to your zucchini offerings, you've gotta find a way to put them to good use.

I bet no one will turn down a loaf this chocolate-y. This amazing recipe is exactly what to do with acres of squash. (One recipe will use one entire medium sized zucchini) Really easy recipe too:

Preheat oven to 350 degrees

Ingredients: 3 eggs

1 cup vegetable oil

3 cups zucchini, finely grated

2 tsps. vanilla

2 tsps. salt

2 cups granulated sugar

1tsp. cinnamon

2 tsps. baking soda

1/4 tsp. baking powder

2 1/3 cups flour

1/2 cup unsweetened cocoa

Directions: Combine dry ingredients, mix with whisk. In a separate bowl, mix together eggs, oil and zucchini, then add dry ingredients; mix together. Pour into 2 mid-sized greased loaf pans. Bake at 350 degrees for 45-50 minutes. Makes 2 loaves. Share with friends.
